Balance

Since I can first remember, I've prepped for the day I'd become a mama.  I never knew exactly what I wanted to do career-wise, or where exactly I wanted to live.  But, there was one thing I knew for sure: I was going to be a mama.   I hadn't outlined exactly how I'd do it, or when or where.  But I knew I was going to do it - and that I'd do it like it'd never been done before.

Late this April, Maksim Alexander entered the world - while simultaneously rocking mine.  He was big and strong, and I knew immediately that he'd require more of me than I'd ever imagined I even had available to give in the first place.  My first reaction was not one of swoon and ooo's and ahhh's.  I remember thinking, "That. JUST. HAPPENED."

He was placed on my chest, and I could instantly feel the floodgates of responsibility drowning me.  Luckily, I had experience in the water and knew how to keep my head afloat.  It wasn't that I doubted my ability to parent my child.  Not at all.  I had that anxious excitement that is always accompanied by little butterflies fluttering in your stomach.  I had determination.  It was more like, "Swimmers, on your blocks...This is it, Linds.  You're really doing this.  Take your mark...You've been waiting patiently almost 29 years for this moment.  You're calling the shots.  And then the single beep of the buzzer...Swim like hell."

Throughout my pregnancy (and prior to becoming pregnant), Bryon and I discussed our plans on how we will parent our children.  Our ideas are always carefully researched and continually evolving.  To say the very least, our approach is about as far from mainstream as you can get without jumping out of the river and running off miles away into the wilderness.  Crunchy?  Perhaps (at times).  Uninformed?  Not in the least.

There are so many aspects of pregnancy, birth and child-rearing that I plan to post about.  However, this particular post is more of an admission to the struggles of parenting outside of the box.  Being a stay at home mama can be lonely.  Being a stay at home mama who parents her child, in seemingly every single possible way, differently from those around her is another thing entirely.

That being said, here are just a handful my confessions:
We chose a natural pregnancy.
We chose a natural birth.
We opted out of all vaccinations for our child.
I breastfeed, exclusively, on demand. (No bottles.)
We stick to a mainly vegan diet.
We practice a combination of elimination communication and cloth diapering.
We co-sleep with our little one.
We carry/wear our baby.
We follow an attachment-esque style parenting approach.
We use use all organic clothing/blankets with our baby.
We stick to baby toys that are non-toxic and BPA-free.
We use soaps, wipe solution, etc. that is all-natural and organic (when possible).

Are there days when I wish I could just stop by our local Target and pick up an easy substitution to our available-online-only clothing?  Yes.  Would shopping at the grocery store and never needing to make an extra return trip because there wasn't organic produce available for the meals I'd planned make my life a lot easier?  You bet.  Do my arms ever feel like they're going to fall off because Maks just wants to be carried just a little bit longer?  Absolutely.  At night, do I sometimes wish I had pumped a bottle so that Bryon could feed Maks and I could get a couple more hours of uninterrupted sleep?  More times than I can count.

But then I remind myself why, exactly, we've chosen to parent the way we're parenting.  It's what we feel is best for our son.  Are there easier ways?  Of course.  But I'm not looking for easy. Nobody ever said parenting was going to be easy.  And "easy" definitely isn't good enough for my little boy.

Nonetheless, there are moments (heck, there are days and weeks) when I feel like I'm in a world all by myself.  And during those times, I want so very badly for someone to tap me on the shoulder and tell me that what I'm doing is right.  But that's the thing about parenthood.  There is no Get-Out-of-Parenthood-Free card.  We ask around, we research and we come to our own conclusions about what is best for our child.

I've found that enjoying my time with Maksim is just as important as sticking to the foundations that we've set for our parenting style.  This little being and I have a bond that we're continually shaping and strengthening.  I'm careful not to let anything loosen even the tiniest thread of our special connection.  So, I search for the balance between doing what I feel is best and doing what makes me the mama I want to be.  And, ironic as it may seem, the respective endpoints are always one in the same.

One of my most admired role models gave me this single piece of parenting advice just days before Maksim was born, "Lindsey, you just be you and your kids will be awesome."  And that is exactly all I can do.  I can only do "me."  But you can rest assured that I consciously make the decision to be me AT MY VERY BEST.  Every. Single. Day.

It's a balancing act.  I'm caught between mainstream and individualism.  And let me tell you, some days that darn peer pressure can be incredibly alluring.  I dove in to the marathon of all swimming events.  Yes, I do realize that I've only just completed the initial laps of the race.  It's hard work.  No - it's full-out exhausting.  But I'm learning to use my legs as much as my arms, rest during any glides, benefit from the drag of others and always come up for air.  And, ultimately, it's worth every second.

R&R

Ah, the life of being swaddled and rocked to sleep.  Why does this ever come to an end? Is it all that wrong that I'm jealous of my infant?  


And how, exactly, does he always manage to wiggle his little toes out of his cocoon?


A definite downside to being a military family is the continual PCSing (relocating) every 3 years or less.  One of my favorite things about visiting back home is getting the opportunity to schedule all of my self-indulgent spa visits.  Maybe it's just me, but I hate trying to find a new "Mr. or Ms. Right" for a hair stylist, massage therapist, etc. when we tackle a new town.

I suppose on the positive side, this dilemma helps me keep unnecessary pampering costs to a minimum (except for when we travel home, that is).  Case in point: Aleasha Schrock-LeClere.  She's hands down the best massage therapist that I've ever booked an appointment with.  From MN to TX to LA...I've searched time and time again to find someone who comes close to matching her talents.  After each new visit, I feel uber disappointed and mad at myself for wasting money on another no-good spa retreat.

Obviously, I never miss an opportunity to book a massage with Aleasha when we travel back to the Midwest.  Ok, ok, I confess.  I booked 2 massages on back to back days just this last visit.  But I was recovering from birthing an 11lb baby.  Naturally.  Give me a break!  Aleasha is certified in Orthopedic Massage, so I always leave her office feeling as though she's helped alleviate any tension AND re-position my body into proper alignment.  I do have to admit - there has been nothing worse for my posture than having a baby.  This is not so much due to the pregnancy period itself, but instead the nursing, carrying around and shifting of body weight in general.   

After my massages, I was explaining to Aleasha how frustrating it is to live so far away and not be able to find a "stand-in" massage therapist while I'm traveling the globe.  (Cue super cool masseuse.)  Aleasha stepped up and actually referred me to a website of massage therapists certified in Orthopedic Massage and helped me find one in my area of Louisiana who is not only licensed in the field, but certified to teach Orthopedic Massage as well.  Undoubtedly, Aleasha could rest assured that I'd still never quit booking appointments with her each and every chance I had to come back home.

Blueberry Breakfast Bake

I'm prepping for guests, which means feverishly sorting through my recipes to find meals vegans and non-vegans alike will savor.  Breakfast at our house is typically either freshly pressed green juice or Ezekiel toast/cereal with tea, but there's something about guests that makes me want to get up a little bit earlier and prepare a dish to share!

Lemon-Blueberry Breakfast Cake

1/2 cup Earth Balance butter
zest from 1 lemon
7/8 cup + 1 Tbsp natural cane sugar
1 egg replacer equivilent (I use 1-1/2 tsp EnerG + 2 Tbsp warm water)
1 tsp vanilla
2 cups whole wheat pastry flour
2 tsp baking powder
1 tsp fine sea salt
2 cups fresh blueberries
1-1/2 tsp lemon juice
approx. 1/2 cup almond milk

1)  Preheat the oven to 350 degrees.
2)  Combine lemon juice with enough almond milk to make 1/2 cup total.  Let sit 5 minutes.
3)  Use mixer to blend the butter with lemon zest and 7/8 cup of sugar until light and fluffy.
4)  Add the egg replacer mixture and vanilla, and beat until combined.  
5)  Toss the blueberries with 1/4 cup of flour.
6) Whisk together the remaining flour, baking powder and salt.
7)  Add the flour mixture to the batter a little at a time, alternating with the lemon-milk.  
8)  Fold in the blueberries.
9) Lightly oil a 8 or 9-inch square baking pan with canola oil.  Spread batter into pan.
10)  Sprinkle batter with remaining tablespoon of sugar.
11)  Bake for 35-45 minutes, until a toothpick inserted comes out clean.
12)  Let cool for 15 minutes, then serve.

You can use frozen blueberries (thaw them) when they're out of season, but the recipe is best with fresh!

Visiting Dr. Ritch

I'm so glad that my midwife recommended her own childrens' pediatrician when I was searching for the right doctor for my little boy!  Dr. Ritch is always so positive and does such a good job handling Maks each and every time we visit.

Here's the updated measurements from Maksim's 3 month check up:
16.5" head circumference
25.5" tall
16lb 2oz

He remains in the 90+ percentiles for weight and height, while his head is steady at the average size for a baby his age.  Dr. Ritch reports that Maksim appears to be about a month or two ahead of schedule developmentally, which explains the increased about of drooling, mouthing and sticking out his tongue (teeth are on their way!).  He's already started rolling over, so that will continue to become more frequent and consistent in the upcoming weeks.

Our Dr.'s office remains a fun, friendly place as Maks continues to avoid unnecessary blood draws, needle pricks and shots.  We left with a clean bill of health!

Vegan Macaroni & "Cheese"

This vegan casserole dish is super yummy.  I love that it doesn't resort to using nutritional yeast to deliver the cheese-like sauce.  Try it, you'll like it!

What You Need:
  • 4 quarts water
  • 1 tablespoon sea salt
  • 8 ounces whole wheat rotini
  • 4 slices of bread (I use Ezekiel), torn into large pieces
  • 2 tablespoons + 1/3 cup Earth Balance butter
  • 2 tablespoons shallots, peeled and chopped
  • 1 cup potatoes, peeled and chopped
  • 1/4 cup carrots, peeled and chopped
  • 1/3 cup onion, peeled and chopped
  • 1 cup water
  • 1/4 cup raw cashews
  • 2 teaspoons sea salt
  • 1/4 teaspoon garlic, minced
  • 1/4 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne
  • 1/4 teaspoon paprika
What You Do:
  1. In a large pot, bring the water and salt to a boil. Add pasta and cook until al dente. Drain pasta, rinse with cold water, and set aside.
  2. In a food processor, make breadcrumbs by pulverizing the bread and 2 tablespoons margarine to a medium-fine texture. Set aside.
  3. Preheat oven to 350 degrees. In a saucepan, add shallots, potatoes, carrots, onion, and water, and bring to a boil. Cover the pan and simmer for 15 minutes, or until vegetables are very soft.
  4. In a blender, process the cashews, salt, garlic, 1/3 cup margarine, mustard, lemon juice, black pepper, and cayenne. Add softened vegetables and cooking water to the blender and process until perfectly smooth.
  5. In a large bowl, toss the cooked pasta and blended cheese sauce until completely coated. Spread mixture into a 9 x 12 casserole dish, sprinkle with prepared breadcrumbs, and dust with paprika. Bake for 30 minutes or until the "cheese" sauce is bubbling and the top has turned golden brown.

Grass Roots

If there is one thing I miss about home (besides family), it's the soft, green grass.  No crabgrass. No fire ants.  No shoes necessary.

While we were back in the Midwest, we just had to get outside and enjoy the perfect mid-80 degree weather.  Maks was full of funny faces and silly noises.  And I just love to watch him interact with his Daddy!

Reunion Recap

18 hours is just too great of a distance to live from the people you love.  Period.

We finished the trip with a Fogle Family Get-together at TugFest!  Great Grandma Fogle held Maks while he watched his very first street parade.  It was so special to see the generation span.  I loved watching my little one snuggle in so comfortably on my Grandma's lap.  Some people are just meant to love little beings; Great Grandma is one of those ladies!



There was so much going on that I finished the weekend with limited photos from our time at the reunion.  With over 40 people present, you'd have though I would manage to snap quite a few more photos than I did.  We left with so many great memories, though!

I'm so happy that Maks was able to meet some of my younger cousins.  Just take a look at how happy they are to interact with one another!

Chocolate muffin goodness

My parents gave me a handy cupcake pan with a lid and handle so that I'm ready to celebrate all of Maks' birthdays and parties in the future.  I could only return the gesture by using the pan to make some tasty treats.  I'm not a big chocolate fan, but my mom loves it, so I whipped up these super quick, chocolaty muffins.  When it comes to chocolate treats, these are pretty darn healthy!  This recipe makes 8 muffins.  Oh, and you MUST eat them right after they've cooled for 10 minutes to get the most of their warm, gooey goodness!

** As always, I try to use organic ingredients, so that goes without saying.  It's up to you, though!  You can always play around with substitutions for oil, sugar, flour, etc.**

1 cup unsweetened applesauce
1 tsp canola oil
2 tsp vanilla extract
1/2 cup turbinado sugar
3/4 cup white whole wheat flour
1/3 cup cacao powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
1/2 tsp ground cinnamon
1/2+ cup organic cacao chips (or vegan chips, if you prefer)

Preheat oven to 350 degrees.  

I use a misto (thanks, Erin and Matt Laney!) to put a little canola or olive oil in the muffin tins to prevent sticking.

Mix together wet (applesauce, oil and vanilla) and dry (remaining) ingredients in separate bowls. 

Combine the wet and dry ingredients.  Distribute between 8 muffin tins.

Bake for 20-25 minutes, just until the tops of the muffins are barely firm to touch.

Cool for 10 minutes and then remove from pan and ENJOY!

Celebrate

Loving my hubby for the Honda Pilot Touring that we purchased.  I've been eyeing it for quite sometime now.  For the last 4 years, we've managed to get by on just 1 vehicle.  While living in downtown Minneapolis, I literally had to walk downstairs from my apartment to work in the plaza below.  Public transportation also allowed us to easily get by with only one vehicle.  Honestly, we only used it when we traveled. 

When we moved to TX, Bryon worked less than a mile from our house.  The same is true at our current home in Louisiana.  He loves his road bike, and thinks nothing of riding to work year-round.  I've been driving our car to my job, but he continues to cycle to and from his office on a daily basis.

However, Bryon is starting a new job at the Cyber Innovations Center which is a bit more of a trek away.  Additionally, Maks's car seat and misc. goods just take up too much of our car when we travel long distances - especially when we bring Kira, too.  Time for a new car!  Thus, our Honda Pilot!


We also celebrated my birthday/our anniversary (belated) with dinner at the Lincoln Cafe in Mount Vernon, IA.  This is where we had our first date and also the place we ate on the evening that Bryon proposed to me.  The restaurant owners even learned that we had a little boy and gave us a onesie for him.  They asked us to take a photo of him wearing it so that they can put his picture up in the restaurant, too!  How things can change in 5 years time!





It was so nice to be able to leave Maksim with his grandparents while we enjoyed a little date to ourselves.  Times like these make me wish family was nearby on a regular basis!
